Every consumer expects flawless and safe food. First of all, everyone who is an entrepreneur in the food chain is responsible for this.

The food control authorities ensure that such an expectation is ultimately fulfilled by means of controls and sampling organised according to certain criteria. They cannot implement complete monitoring. If deficiencies are found, it is the task of the official food control authority to ensure that they are remedied immediately and that violations of existing legal regulations are punished.
